Ingredients

  • 500g beef tongue, sliced
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 3 red chilies, sliced
  • 1 stalk lemongrass, bruised
  • 4 kaffir lime leaves
  • 400ml coconut milk
  • 2 cups beef broth
  • 2 tablespoons tamarind paste
  • 1 tablespoon palm sugar
  • Salt to taste

Instructions

  1. In a large pot, combine the beef tongue, onions, garlic, red chilies, lemongrass, and kaffir lime leaves.
  2. Pour in the coconut milk and beef broth. Bring to a boil, then reduce the heat and simmer for 1.5 hours, or until the beef tongue is tender.
  3. Stir in the tamarind paste and palm sugar. Season with salt to taste.
  4. Simmer for an additional 30 minutes to allow the flavors to meld together.
