Ingredients

  • 500g young jackfruit, cut into chunks
  • 400ml coconut milk
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 3 red chilies, sliced
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 1-inch galangal, sliced
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon tamarind paste
  • Salt to taste
  • Sugar to taste
  • Water

Instructions

  1. In a large pot, combine coconut milk, lemongrass, kaffir lime leaves, red chilies, shallots, garlic, galangal, turmeric powder, and coriander powder.
  2. Bring the mixture to a gentle simmer over medium heat.
  3. Add the jackfruit chunks and tamarind paste to the pot. Stir well to combine.
  4. Add water as needed to ensure the jackfruit is fully submerged in the liquid.
  5. Simmer the curry for 45-50 minutes, or until the jackfruit is tender and the flavors have melded together.
  6. Season the curry with salt and sugar to taste.
  7. Serve the Gulai Nangka Pedas hot with steamed rice.
