Ingredients
- 500g young jackfruit, cut into chunks
- 400ml coconut milk
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 3 red chilies, sliced
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 1-inch galangal, sliced
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon tamarind paste
- Salt to taste
- Sugar to taste
- Water
Instructions
- In a large pot, combine coconut milk, lemongrass, kaffir lime leaves, red chilies, shallots, garlic, galangal, turmeric powder, and coriander powder.
- Bring the mixture to a gentle simmer over medium heat.
- Add the jackfruit chunks and tamarind paste to the pot. Stir well to combine.
- Add water as needed to ensure the jackfruit is fully submerged in the liquid.
- Simmer the curry for 45-50 minutes, or until the jackfruit is tender and the flavors have melded together.
- Season the curry with salt and sugar to taste.
- Serve the Gulai Nangka Pedas hot with steamed rice.
