Ingredients

  • 1 can (20 oz) young jackfruit, drained and rinsed
  • 2 cups coconut milk
  • 3 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 lemongrass stalk, bruised
  • 3 kaffir lime leaves
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon salt
  • 1 tablespoon tamarind paste
  • 2 tablespoons vegetable oil
  • 4 cups water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
  2. Add the turmeric powder and coriander powder. Stir well to combine.
  3. Pour in the coconut milk and water. Add the lemongrass, kaffir lime leaves, and tamarind paste. Bring to a gentle boil.
  4. Add the jackfruit to the pot. Reduce the heat to low and simmer for 1 hour, or until the jackfruit is tender and the flavors have melded together.
  5. Season with salt to taste. Remove the lemongrass stalk before serving.
