Ingredients
- 1 can (20 oz) young jackfruit, drained and rinsed
- 2 cups coconut milk
- 3 shallots, finely chopped
- 4 cloves garlic, minced
- 2 red chilies, sliced
- 1 lemongrass stalk, bruised
- 3 kaffir lime leaves
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon salt
- 1 tablespoon tamarind paste
- 2 tablespoons vegetable oil
- 4 cups water
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
- Add the turmeric powder and coriander powder. Stir well to combine.
- Pour in the coconut milk and water. Add the lemongrass, kaffir lime leaves, and tamarind paste. Bring to a gentle boil.
- Add the jackfruit to the pot. Reduce the heat to low and simmer for 1 hour, or until the jackfruit is tender and the flavors have melded together.
- Season with salt to taste. Remove the lemongrass stalk before serving.
