Ingredients

  • 1.5 lbs beef, cut into cubes
  • 4 shallots, finely chopped
  • 5 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 1-inch galangal, sliced
  • 4 red chilies, sliced
  • 1 can (14 oz) coconut milk
  • 1 cup water
  • 3 tbsp vegetable oil
  • 1 tsp tamarind paste
  • Salt to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté shallots and garlic until fragrant.
  2. Add beef cubes and cook until browned.
  3. Stir in lemongrass, kaffir lime leaves, galangal, and red chilies.
