Ingredients
- 500g mixed seafood (shrimp, squid, fish)
- 2 tomatoes, diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 stalk lemongrass, bruised
- 4 kaffir lime leaves
- 400ml coconut milk
- 2 tablespoons tamarind paste
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- Salt to taste
- Sugar to taste
- 2 tablespoons cooking oil
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and sliced red chilies. Sauté until fragrant.
- Add the mixed seafood and cook for 2-3 minutes.
- Stir in the turmeric powder and coriander powder, then add the diced tomatoes, lemongrass, and kaffir lime leaves.
- Pour in the coconut milk and tamarind paste. Season with salt and sugar to taste.
- Simmer the curry for 15-20 minutes until the seafood is cooked through and the flavors have melded together.
- Remove the lemongrass and kaffir lime leaves before serving.
