Ingredients

  • 500g mixed seafood (shrimp, squid, fish)
  • 2 tomatoes, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 stalk lemongrass, bruised
  • 4 kaffir lime leaves
  • 400ml coconut milk
  • 2 tablespoons tamarind paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • Sugar to taste
  • 2 tablespoons cooking oil

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and sliced red chilies. Sauté until fragrant.
  3. Add the mixed seafood and cook for 2-3 minutes.
  4. Stir in the turmeric powder and coriander powder, then add the diced tomatoes, lemongrass, and kaffir lime leaves.
  5. Pour in the coconut milk and tamarind paste. Season with salt and sugar to taste.
  6. Simmer the curry for 15-20 minutes until the seafood is cooked through and the flavors have melded together.
  7. Remove the lemongrass and kaffir lime leaves before serving.
