Gulai (spicy Grilled Eggplant)
Gulai is a traditional Batak cuisine dish that features spicy grilled eggplant, perfect for those who love a kick of heat in their meals.
Ingredients
- 4 medium-sized eggplants, sliced lengthwise
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon salt
- 1 cup coconut milk
- 1 cup water
- 2 kaffir lime leaves
Instructions
- Preheat the grill to medium heat.
- Brush the eggplant slices with vegetable oil and grill for 3-4 minutes on each side until tender. Set aside.
- In a large pan, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped onion, garlic, and red chilies. Sauté until fragrant.
- Stir in the turmeric, coriander, cumin, and salt. Cook for 2 minutes.
- Pour in the coconut milk and water. Add the kaffir lime leaves. Bring to a simmer.
- Add the grilled eggplant to the pan and simmer for 5-7 minutes, allowing the flavors to meld.
- Remove from heat and serve the spicy grilled eggplant hot with steamed rice.
