Ingredients

  • 4 medium-sized eggplants, sliced lengthwise
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon salt
  • 1 cup coconut milk
  • 1 cup water
  • 2 kaffir lime leaves

Instructions

  1. Preheat the grill to medium heat.
  2. Brush the eggplant slices with vegetable oil and grill for 3-4 minutes on each side until tender. Set aside.
  3. In a large pan, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped onion, garlic, and red chilies. Sauté until fragrant.
  4. Stir in the turmeric, coriander, cumin, and salt. Cook for 2 minutes.
  5. Pour in the coconut milk and water. Add the kaffir lime leaves. Bring to a simmer.
  6. Add the grilled eggplant to the pan and simmer for 5-7 minutes, allowing the flavors to meld.
  7. Remove from heat and serve the spicy grilled eggplant hot with steamed rice.
