Gulai (spicy Grilled Mushrooms)

Ingredients

  • 500g fresh mushrooms, cleaned and halved
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 stalk lemongrass, bruised
  • 4 kaffir lime leaves
  • 400ml coconut milk
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Grill the mushrooms for 5-7 minutes on each side, or until they are tender and slightly charred. Set aside.
  3. In a large pan, heat the vegetable oil over medium heat. Add the onions, garlic, and red chilies. Sauté until the onions are soft and translucent.
  4. Add the lemongrass and kaffir lime leaves to the pan. Cook for 2-3 minutes to release their flavors.
  5. Pour in the coconut milk and bring the mixture to a gentle simmer.
  6. Add the grilled mushrooms to the pan and stir to coat them in the sauce. Simmer for 5-7 minutes, allowing the flavors to meld together.
  7. Season with salt to taste.
  8. Remove the lemongrass and kaffir lime leaves before serving.
