Gulai (spicy Grilled Mushrooms)
Gulai is a traditional Batak dish known for its rich and spicy flavors. This recipe puts a unique twist on the classic dish by using grilled mushrooms as the main ingredient. The result is a delicious and aromatic dish that is perfect for a special occasion or a cozy family dinner.
Ingredients
- 500g fresh mushrooms, cleaned and halved
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 2 red chilies, sliced
- 1 stalk lemongrass, bruised
- 4 kaffir lime leaves
- 400ml coconut milk
- 2 tablespoons vegetable oil
- Salt to taste
Instructions
- Preheat the grill to medium-high heat.
- Grill the mushrooms for 5-7 minutes on each side, or until they are tender and slightly charred. Set aside.
- In a large pan, heat the vegetable oil over medium heat. Add the onions, garlic, and red chilies. Sauté until the onions are soft and translucent.
- Add the lemongrass and kaffir lime leaves to the pan. Cook for 2-3 minutes to release their flavors.
- Pour in the coconut milk and bring the mixture to a gentle simmer.
- Add the grilled mushrooms to the pan and stir to coat them in the sauce. Simmer for 5-7 minutes, allowing the flavors to meld together.
- Season with salt to taste.
- Remove the lemongrass and kaffir lime leaves before serving.
