Ingredients

  • 500g fresh okra, washed and dried
  • 3 tbsp cooking oil
  • 2 red chilies, sliced
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp salt
  • 1 cup coconut milk
  • 1 cup water

Instructions

  1. Preheat the stovetop grill over medium heat.
  2. In a bowl, mix the okra with 2 tbsp of cooking oil, ensuring they are evenly coated.
  3. Grill the okra for 5-7 minutes, turning occasionally, until they are charred and tender.
  4. In a separate pan, heat the remaining 1 tbsp of cooking oil over medium heat.
  5. Add the sliced red chilies, shallots, and garlic, and sauté until fragrant.
  6. Stir in the turmeric, coriander, cumin, and salt, cooking for 1-2 minutes.
  7. Pour in the coconut milk and water, then bring to a simmer.
  8. Add the grilled okra to the pan, simmer for 5 minutes, and then remove from heat.
  9. Serve the Gulai hot with steamed rice.
