Gulai Tahu Pedas (spicy Tofu Curry)

Ingredients

  • 400g firm tofu, cut into cubes
  • 2 cups coconut milk
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 lemongrass stalk, bruised
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp galangal, grated
  • 1 tsp tamarind paste
  • Salt to taste
  • Sugar to taste
  • 2 tbsp cooking oil

Instructions

  1. Heat the cooking oil in a large pan over medium heat.
  2. Add the shallots, garlic, and red chilies. Sauté until fragrant.
  3. Add the turmeric powder, coriander powder, and grated galangal. Stir well.
  4. Pour in the coconut milk and add the lemongrass stalk and tamarind paste. Bring to a simmer.
  5. Add the tofu cubes and let the curry simmer for 15-20 minutes, stirring occasionally.
  6. Season with salt and sugar to taste.
  7. Serve the Gulai Tahu Pedas hot with steamed rice.
