Gulai Tahu Pedas (spicy Tofu Curry)
Gulai Tahu Pedas, or Spicy Tofu Curry, is a traditional dish from the Padang food cuisine in Indonesia. This flavorful and spicy curry is made with tofu, simmered in a rich and aromatic coconut milk-based sauce, and is typically served with steamed rice.
Ingredients
- 400g firm tofu, cut into cubes
- 2 cups coconut milk
- 4 shallots, finely chopped
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 lemongrass stalk, bruised
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp galangal, grated
- 1 tsp tamarind paste
- Salt to taste
- Sugar to taste
- 2 tbsp cooking oil
Instructions
- Heat the cooking oil in a large pan over medium heat.
- Add the shallots, garlic, and red chilies. Sauté until fragrant.
- Add the turmeric powder, coriander powder, and grated galangal. Stir well.
- Pour in the coconut milk and add the lemongrass stalk and tamarind paste. Bring to a simmer.
- Add the tofu cubes and let the curry simmer for 15-20 minutes, stirring occasionally.
- Season with salt and sugar to taste.
- Serve the Gulai Tahu Pedas hot with steamed rice.
