Ingredients
- 1 block of firm tofu, cut into cubes
- 2 eggplants, cut into chunks
- 2 cups coconut milk
- 4 shallots, finely chopped
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 lemongrass stalk, bruised
- 2 kaffir lime leaves
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon salt
- 1 tablespoon tamarind paste
- 2 tablespoons cooking oil
- 4 cups water
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
- Add the turmeric and coriander powder, lemongrass, and kaffir lime leaves. Stir well to combine.
- Pour in the coconut milk and water. Bring to a gentle simmer.
- Add the tofu and eggplant. Let it simmer for 20-25 minutes until the vegetables are tender.
- Stir in the tamarind paste and salt. Adjust the seasoning according to your taste.
