Ingredients
- 400g tempeh, cut into cubes
- 2 cups coconut milk

- 3 kaffir lime leaves
- 1 turmeric leaf, torn
- 1 teaspoon tamarind paste
- 1 teaspoon palm sugar
- Salt to taste

Instructions
- In a large pot, combine coconut milk, shallots, garlic, red chilies, galangal, lemongrass, kaffir lime leaves, and turmeric leaf. Bring to a simmer over medium heat.
- Add the tempeh, tamarind paste, palm sugar, and salt. Stir well to combine.
- Add water as needed to achieve the desired consistency of the curry. Simmer for 20-25 minutes until the tempeh is tender and the flavors have melded together.
- Adjust the seasoning if needed, then remove from heat.
