Ingredients

  • 400g tempeh, cut into cubes

  • 1-inch galangal, sliced
  • 2 lemongrass stalks, bruised
  • 3 kaffir lime leaves
  • 1 turmeric leaf, torn
  • 1 teaspoon tamarind paste
  • 1 teaspoon palm sugar
  • Salt to taste
  • Water

Instructions

  1. In a large pot, combine coconut milk, shallots, garlic, red chilies, galangal, lemongrass, kaffir lime leaves, and turmeric leaf. Bring to a simmer over medium heat.
  2. Add the tempeh, tamarind paste, palm sugar, and salt. Stir well to combine.
  3. Add water as needed to achieve the desired consistency of the curry. Simmer for 20-25 minutes until the tempeh is tender and the flavors have melded together.
  4. Adjust the seasoning if needed, then remove from heat.
