Gulai Terong Pedas (spicy Eggplant Curry)

Ingredients

  • 2 large eggplants, cut into cubes
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 stalk lemongrass, bruised
  • 4 kaffir lime leaves
  • 400ml coconut milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon tamarind paste
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and sliced red chilies. Sauté until fragrant.
  2. Add the lemongrass, kaffir lime leaves, and tamarind paste. Stir well to combine.
  3. Pour in the coconut milk and bring the mixture to a gentle simmer.
  4. Add the cubed eggplants and cook until they are tender, about 15-20 minutes.
  5. Season with salt to taste.
  6. Serve the Gulai Terong Pedas hot with steamed rice.
