Ingredients
- 2 large eggplants, cut into cubes
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 stalk lemongrass, bruised
- 4 kaffir lime leaves
- 400ml coconut milk
- 2 tablespoons vegetable oil
- 1 teaspoon tamarind paste
- Salt to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and sliced red chilies. Sauté until fragrant.
- Add the lemongrass, kaffir lime leaves, and tamarind paste. Stir well to combine.
- Pour in the coconut milk and bring the mixture to a gentle simmer.
- Add the cubed eggplants and cook until they are tender, about 15-20 minutes.
- Season with salt to taste.
- Serve the Gulai Terong Pedas hot with steamed rice.
