Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 cups (480ml) coconut milk
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 stalk lemongrass, bruised
  • 1 inch (2.5cm) galangal, sliced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp salt
  • 1 tsp sugar
  • 2 cups (480ml) water
  • 2 tbsp cooking oil

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Sauté the onion, garlic, red chilies, lemongrass, and galangal until fragrant.
  2. Add the turmeric powder and coriander powder, stir for a minute.
  3. Pour in the coconut milk and water. Bring to a gentle simmer.
  4. Add the shrimp, salt, and sugar. Cook for 5-7 minutes until the shrimp is pink and cooked through.
  5. Remove the lemongrass and galangal. Serve the Gulai Udang Makassar hot with steamed rice.
