Gulai Udang Makassar is a traditional dish from the coastal city of Makassar in Indonesia. This rich and flavorful coconut milk shrimp dish is a staple in Makassar cuisine, known for its aromatic spices and creamy sauce.
Ingredients
- 1 lb (450g) large shrimp, peeled and deveined
- 2 cups (480ml) coconut milk
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 stalk lemongrass, bruised
- 1 inch (2.5cm) galangal, sliced
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp salt
- 1 tsp sugar
- 2 cups (480ml) water
- 2 tbsp cooking oil
Instructions
- In a large pot, heat the cooking oil over medium heat. Sauté the onion, garlic, red chilies, lemongrass, and galangal until fragrant.
- Add the turmeric powder and coriander powder, stir for a minute.
- Pour in the coconut milk and water. Bring to a gentle simmer.
- Add the shrimp, salt, and sugar. Cook for 5-7 minutes until the shrimp is pink and cooked through.
- Remove the lemongrass and galangal. Serve the Gulai Udang Makassar hot with steamed rice.
