Ingredients
- 500g shrimp, peeled and deveined
- 2 cups coconut milk
- 4 shallots, finely chopped
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 stalk lemongrass, bruised
- 3 kaffir lime leaves
- 1 inch galangal, sliced
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon tamarind paste
- Salt to taste
- Sugar to taste
- 2 tablespoons cooking oil
Instructions
- Heat the cooking oil in a pan over medium heat.
- Add the shallots, garlic, and red chilies. Sauté until fragrant.
- Add the turmeric powder, coriander powder, lemongrass, kaffir lime leaves, and galangal. Stir well.
- Pour in the coconut milk and bring to a gentle simmer.
- Add the shrimp and cook until they turn pink and opaque.
- Stir in the tamarind paste, salt, and sugar. Adjust the seasoning to taste.
- Serve the Gulai Udang Pedas hot with steamed rice.
