Gulai Udang Pedas (spicy Shrimp Curry)

Ingredients

  • 500g shrimp, peeled and deveined
  • 2 cups coconut milk
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 stalk lemongrass, bruised
  • 3 kaffir lime leaves
  • 1 inch galangal, sliced
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon tamarind paste
  • Salt to taste
  • Sugar to taste
  • 2 tablespoons cooking oil

Instructions

  1. Heat the cooking oil in a pan over medium heat.
  2. Add the shallots, garlic, and red chilies. Sauté until fragrant.
  3. Add the turmeric powder, coriander powder, lemongrass, kaffir lime leaves, and galangal. Stir well.
  4. Pour in the coconut milk and bring to a gentle simmer.
  5. Add the shrimp and cook until they turn pink and opaque.
  6. Stir in the tamarind paste, salt, and sugar. Adjust the seasoning to taste.
  7. Serve the Gulai Udang Pedas hot with steamed rice.
