Gulash (spiced Lamb Stew)

Ingredients

  • 1.5 lbs lamb, cut into cubes
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 red bell peppers, diced
  • 2 tbsp paprika
  • 1 tsp caraway seeds
  • 1 cup beef broth
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the lamb cubes and brown on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, add the onions and cook until softened. Add the garlic, paprika, and caraway seeds, and cook for another minute.
  3. Return the lamb to the pot and add the diced tomatoes, bell peppers, and beef broth. Season with salt and pepper.
  4. Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the lamb is tender.
  5. Serve the spiced lamb stew hot, garnished with fresh herbs if desired.
