Gulash (spiced Lamb Stew)

Ingredients
- 1.5 lbs lamb, cut into cubes
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 red bell peppers, diced
- 2 tbsp paprika
- 1 tsp caraway seeds
- 1 cup beef broth
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium heat. Add the lamb cubes and brown on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the onions and cook until softened. Add the garlic, paprika, and caraway seeds, and cook for another minute.
- Return the lamb to the pot and add the diced tomatoes, bell peppers, and beef broth. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the lamb is tender.
- Serve the spiced lamb stew hot, garnished with fresh herbs if desired.
