Gulyas (transcarpathian Goulash)
Gulyas, also known as Transcarpathian Goulash, is a traditional Cossack dish that is hearty, flavorful, and perfect for warming up on a cold day. This stew-like dish is packed with tender meat, aromatic spices, and vegetables, making it a comforting and satisfying meal.
Ingredients
- 2 lbs beef, cut into cubes
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 red bell peppers, diced
- 2 tomatoes, chopped
- 2 tbsp paprika
- 1 tsp caraway seeds
- 4 cups beef broth
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef cubes over medium-high heat.
- Add the onions and garlic, and cook until softened.
- Stir in the paprika and caraway seeds, then add the bell peppers and tomatoes.
- Pour in the beef broth and season with salt and pepper.
- Simmer the gulyas over low heat for 1.5 to 2 hours, until the meat is tender and the flavors have melded together.
