Ingredients

  • 2 cups basmati rice
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 large onion, finely chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onions and sauté until translucent.
  2. Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Stir well and cook for a few minutes until fragrant.
  3. Add the diced tomatoes and cook until they start to break down.
  4. Stir in the basmati rice and chickpeas, then pour in the vegetable broth. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Fluff the gurumba with a fork, garnish with fresh cilantro, and serve hot.
