Gurumba
Gurumba is a delicious and aromatic dish that originates from the diverse cuisine of East Africa. This flavorful dish is perfect for sharing with family and friends.
Ingredients
- 2 cups basmati rice
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 large onion, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onions and sauté until translucent.
- Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Stir well and cook for a few minutes until fragrant.
- Add the diced tomatoes and cook until they start to break down.
- Stir in the basmati rice and chickpeas, then pour in the vegetable broth. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the gurumba with a fork, garnish with fresh cilantro, and serve hot.
