Gutti Vankaya

Ingredients

  • 10 small Indian eggplants
  • 1 cup roasted peanuts
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 tablespoon tamarind paste
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 1 tablespoon garam masala
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. Wash the eggplants and make a slit in the middle, keeping them whole.
  2. Grind the roasted peanuts into a coarse powder and mix it with chopped onions, tomatoes, tamarind paste, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt.
  3. Stuff the eggplants with the spice mix.
  4. Heat oil in a pan and place the stuffed eggplants in it.
  5. Cover and cook on low heat until the eggplants are tender.
  6. Serve hot with steamed rice or roti.
