Gutti Vankaya
Gutti Vankaya is a traditional South Indian dish made with small eggplants stuffed with a flavorful spice mix and cooked to perfection. This dish is a perfect blend of spices and textures, making it a favorite among many.
Ingredients
- 10 small Indian eggplants
- 1 cup roasted peanuts
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1 tablespoon tamarind paste
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 tablespoon coriander powder
- 1 tablespoon cumin powder
- 1 tablespoon garam masala
- Salt to taste
- 2 tablespoons oil
Instructions
- Wash the eggplants and make a slit in the middle, keeping them whole.
- Grind the roasted peanuts into a coarse powder and mix it with chopped onions, tomatoes, tamarind paste, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt.
- Stuff the eggplants with the spice mix.
- Heat oil in a pan and place the stuffed eggplants in it.
- Cover and cook on low heat until the eggplants are tender.
- Serve hot with steamed rice or roti.
