Guyanese Roti Wrap

Ingredients
- 4 roti skins
- 2 cups cooked chickpeas
- 1 onion, sliced
- 2 tomatoes, diced
- 1 green bell pepper, sliced
- 1 tsp cumin powder
- 1 tsp curry powder
- 1/2 tsp turmeric powder
- 1/2 tsp chili powder
- Salt to taste
- 2 tbsp vegetable oil
Instructions
- Heat vegetable oil in a pan over medium heat.
- Add sliced onion and cook until translucent.
- Add diced tomatoes and sliced bell pepper, and cook for 5 minutes.
- Add cumin powder, curry powder, turmeric powder, chili powder, and salt. Stir well to combine.
- Add cooked chickpeas and cook for another 5 minutes.
- Warm the roti skins on a separate pan.
- Place a portion of the chickpea mixture in the center of each roti skin.
- Wrap the roti around the filling, folding in the sides and rolling it up tightly.
- Serve the Guyanese Roti Wraps and enjoy!
