Guyanese Roti Wrap

Ingredients

  • 4 roti skins
  • 2 cups cooked chickpeas
  • 1 onion, sliced
  • 2 tomatoes, diced
  • 1 green bell pepper, sliced
  • 1 tsp cumin powder
  • 1 tsp curry powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • Salt to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a pan over medium heat.
  2. Add sliced onion and cook until translucent.
  3. Add diced tomatoes and sliced bell pepper, and cook for 5 minutes.
  4. Add cumin powder, curry powder, turmeric powder, chili powder, and salt. Stir well to combine.
  5. Add cooked chickpeas and cook for another 5 minutes.
  6. Warm the roti skins on a separate pan.
  7. Place a portion of the chickpea mixture in the center of each roti skin.
  8. Wrap the roti around the filling, folding in the sides and rolling it up tightly.
  9. Serve the Guyanese Roti Wraps and enjoy!
