Ingredients
- 2 lbs chicken, cut into pieces
- 2 tbsp curry powder
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 2 potatoes, peeled and cubed
- 1 scotch bonnet pepper, chopped
- 1 cup coconut milk
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Season the chicken with salt, pepper, and 1 tablespoon of curry powder.
- Heat the vegetable oil in a large pot over medium heat.
- Add the onion, garlic, and ginger, and sauté until the onion is translucent.
- Add the remaining curry powder and cook for 1-2 minutes to toast the spices.
- Add the seasoned chicken to the pot and cook until browned on all sides.
- Add the tomatoes, potatoes, scotch bonnet pepper, and coconut milk. Stir to combine.
- Reduce the heat to low, cover the pot, and simmer for 45-50 minutes, or until the chicken is cooked through and the potatoes are tender.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the Guyanese Style Chicken Curry hot with rice or roti.
