Guyanese Style Chicken Curry

Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 tbsp curry powder
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 2 potatoes, peeled and cubed
  • 1 scotch bonnet pepper, chopped
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken with salt, pepper, and 1 tablespoon of curry powder.
  2. Heat the vegetable oil in a large pot over medium heat.
  3. Add the onion, garlic, and ginger, and sauté until the onion is translucent.
  4. Add the remaining curry powder and cook for 1-2 minutes to toast the spices.
  5. Add the seasoned chicken to the pot and cook until browned on all sides.
  6. Add the tomatoes, potatoes, scotch bonnet pepper, and coconut milk. Stir to combine.
  7. Reduce the heat to low, cover the pot, and simmer for 45-50 minutes, or until the chicken is cooked through and the potatoes are tender.
  8. Adjust the seasoning with salt and pepper, if needed.
  9. Serve the Guyanese Style Chicken Curry hot with rice or roti.
