Gyathuk Ko Masu (sikkimese Style Spicy Pork Ribs)

Ingredients
- 1 kg pork ribs
- 2 onions, finely chopped
- 4 tomatoes, diced
- 5 garlic cloves, minced
- 2-inch ginger, grated
- 2 green chilies, chopped
- 1 tablespoon cumin powder
- 1 tablespoon coriander powder
- 1 tablespoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons vegetable oil
- 4 cups water
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions and sauté until they turn golden brown.
- Add the minced garlic, grated ginger, and green chilies. Sauté for 2-3 minutes.
- Add the diced tomatoes and cook until they turn soft and the oil separates.
- Now, add the pork ribs to the pot and mix well with the onion-tomato mixture.
- Add the cumin powder, coriander powder, red chili powder, turmeric powder, garam masala, and salt. Mix everything thoroughly.
- Pour in the water and bring the mixture to a boil. Then, reduce the heat to low, cover the pot, and let it simmer for about 1 hour or until the pork ribs are tender.
- Once the pork ribs are cooked, adjust the seasoning if needed and garnish with fresh coriander leaves.
- Serve the Gyathuk Ko Masu hot with steamed rice or traditional Sikkimese bread.
