Gyathuk Ko Masu (sikkimese Style Spicy Pork Ribs)

Ingredients

  • 1 kg pork ribs
  • 2 onions, finely chopped
  • 4 tomatoes, diced
  • 5 garlic cloves, minced
  • 2-inch ginger, grated
  • 2 green chilies, chopped
  • 1 tablespoon cumin powder
  • 1 tablespoon coriander powder
  • 1 tablespoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 4 cups water

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Add the minced garlic, grated ginger, and green chilies. Sauté for 2-3 minutes.
  4. Add the diced tomatoes and cook until they turn soft and the oil separates.
  5. Now, add the pork ribs to the pot and mix well with the onion-tomato mixture.
  6. Add the cumin powder, coriander powder, red chili powder, turmeric powder, garam masala, and salt. Mix everything thoroughly.
  7. Pour in the water and bring the mixture to a boil. Then, reduce the heat to low, cover the pot, and let it simmer for about 1 hour or until the pork ribs are tender.
  8. Once the pork ribs are cooked, adjust the seasoning if needed and garnish with fresh coriander leaves.
  9. Serve the Gyathuk Ko Masu hot with steamed rice or traditional Sikkimese bread.
