Gyathuk is a traditional Sikkimese spiced rice dish that is packed with flavor and perfect for a comforting meal. This recipe combines aromatic spices with tender rice to create a dish that is both satisfying and delicious.

Gyathuk (sikkimese Spiced Rice)

Ingredients

  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 carrot, julienned
  • 1/2 cup green peas
  • 2 green chilies, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 4 cups water
  • Fresh cilantro for garnish

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
  2. Heat oil in a large pot over medium heat. Add the cumin seeds and sauté until they start to splutter.
  3. Add the chopped onion and green chilies. Sauté until the onions are translucent.
  4. Stir in the diced tomatoes, julienned carrots, and green peas. Cook for 5 minutes.
  5. Add the turmeric powder, coriander powder, red chili powder, and garam masala. Mix well to coat the vegetables.
  6. Add the rinsed basmati rice to the pot and stir to combine with the vegetables and spices.
  7. Pour in the water and season with salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
  8. Fluff the rice with a fork and garnish with fresh cilantro before serving.
