Haah Mankho (assamese Duck Roast)
Haah Mankho, or Assamese Duck Roast, is a traditional dish from the northeastern state of Assam in India. This flavorful and aromatic dish is a popular part of Assamese cuisine and is often served during special occasions and festivals.
Ingredients
- 1 whole duck, cleaned and cut into pieces
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 4-5 green chilies, slit
- 1/2 cup mustard oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat mustard oil in a heavy-bottomed pan.
- Add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for a few minutes.
- Add the duck pieces and cook until they are slightly browned.
- Stir in the tomato puree, turmeric powder, red chili powder, cumin powder, and coriander powder. Cook for 10-15 minutes.
- Add the slit green chilies and salt to taste. Cover and cook until the duck is tender.
- Garnish with fresh coriander leaves before serving.
