Ingredients

  • 500g chicken, cut into pieces
  • 1 cup mustard greens, chopped
  • 1/2 cup bamboo shoots, sliced
  • 2 onions, finely chopped
  • 3-4 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 2 tablespoons mustard oil
  • Salt to taste
  • Water

Instructions

  1. Heat mustard oil in a pan and add the chopped onions. Sauté until golden brown.
  2. Add the ginger-garlic paste and green chilies. Cook for a few minutes.
  3. Add the chicken pieces and cook until they are browned.
  4. Stir in the turmeric, cumin, coriander, and red chili powders. Cook for a few minutes.
  5. Add the chopped mustard greens and bamboo shoots. Mix well.
  6. Pour in enough water to cover the chicken and vegetables. Season with salt.
  7. Cover and cook for 20-25 minutes, or until the chicken is tender.
  8. Sprinkle garam masala on top and simmer for a few more minutes.
  9. Haahor Mangxo Jol Bhaja Curry is ready to be served hot with steamed rice.
