This Haahor Mangxo Jol Bhaja Curry Raja Mircha is a traditional dish from the North East Indian state of Assam. It features tender chicken cooked in a flavorful curry with mustard greens, bamboo shoots, and the infamous ghost chili, known for its intense heat.
Ingredients
- 500g chicken, cut into pieces
- 1 cup mustard greens, chopped
- 1/2 cup bamboo shoots
- 2-3 ghost chilies, slit
- 1 onion, finely chopped
- 3-4 garlic cloves, minced
- 1-inch ginger, grated
- 1 tomato, chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 2 tablespoons mustard oil
- 2 cups water
Instructions
- Heat mustard oil in a pan and add the chopped onion, garlic, and ginger. Sauté until the onions are golden brown.
- Add the chicken pieces and cook until they are browned on all sides.
- Stir in the chopped tomato, turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Cook for 5 minutes.
- Add the mustard greens, bamboo shoots, and slit ghost chilies. Mix well and cook for another 5 minutes.
- Pour in the water, cover the pan, and simmer for 20-25 minutes until the chicken is tender and the flavors are well combined.
- Once done, serve hot with steamed rice.
