Haam Sui Gwo (fried Shrimp Dumplings)

Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 1/2 cup water chestnuts, finely chopped
  • 2 green onions, finely chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 20 square wonton wrappers
  • Oil for frying

Instructions

  1. In a food processor, pulse the shrimp until finely chopped.
  2. Transfer the chopped shrimp to a bowl and add water chestnuts, green onions, soy sauce, sesame oil, sugar, and white pepper. Mix well.
  3. Place a small amount of the shrimp mixture in the center of each wonton wrapper. Moisten the edges with water, then fold the wrapper in half to form a triangle, pressing the edges to seal.
  4. Heat oil in a pan over medium heat. Fry the dumplings in batches until golden brown and crispy, about 3-4 minutes per side.
  5. Remove the dumplings and drain on paper towels. Serve hot.
