Ingredients

  • 4 medium-sized bitter gourds
  • 1 cup gram flour (besan)
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • Oil for deep frying

Instructions

  1. Wash the bitter gourds and cut them into thick round slices. Remove the seeds and pith from the slices, creating a cavity for the stuffing.
  2. In a bowl, mix gram flour, red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Add a little water to make a thick paste.
  3. Stuff the bitter gourd slices with the prepared spice mix.
  4. Heat oil in a deep pan and carefully place the stuffed bitter gourd slices in the hot oil. Fry until they turn golden brown and crispy.
  5. Remove the fried bajjis from the oil and place them on a paper towel to drain excess oil.
  6. Serve hot with chutney or ketchup.
