Ingredients
- 4 medium-sized bitter gourds
- 1 cup gram flour (besan)
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- Salt to taste
- Oil for deep frying
Instructions
- Wash the bitter gourds and cut them into thick round slices. Remove the seeds and pith from the slices, creating a cavity for the stuffing.
- In a bowl, mix gram flour, red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Add a little water to make a thick paste.
- Stuff the bitter gourd slices with the prepared spice mix.
- Heat oil in a deep pan and carefully place the stuffed bitter gourd slices in the hot oil. Fry until they turn golden brown and crispy.
- Remove the fried bajjis from the oil and place them on a paper towel to drain excess oil.
- Serve hot with chutney or ketchup.
