Ingredients

  • 2 lbs live mud crabs
  • 1/4 cup vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 red chilies, sliced
  • 1/4 cup tomato ketchup
  • 1/4 cup chili sauce
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 2 tbsp sugar
  • 1 egg, beaten
  • 2 green onions, chopped

Instructions

  1. Clean and prepare the crabs by removing the top shell and cutting them into quarters.
  2. Heat the vegetable oil in a large wok over medium heat. Add the onion, garlic, and red chilies, and stir-fry until fragrant.
  3. Stir in the tomato ketchup, chili sauce, soy sauce, water, and sugar. Bring to a simmer.
  4. Add the crab pieces to the wok and stir to coat them with the sauce. Cover and cook for 8-10 minutes, or until the crab is cooked through.
  5. Slowly pour in the beaten egg while stirring the crab mixture gently to create a silky texture.
  6. Garnish with chopped green onions before serving.
