Hainan Chili Crab
Hainan Chili Crab is a popular dish in Hainan Cuisine, known for its flavorful and spicy sauce that complements the sweetness of the crab meat.
Ingredients
- 2 lbs live mud crabs
- 1/4 cup vegetable oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 red chilies, sliced
- 1/4 cup tomato ketchup
- 1/4 cup chili sauce
- 1/4 cup soy sauce
- 1/4 cup water
- 2 tbsp sugar
- 1 egg, beaten
- 2 green onions, chopped
Instructions
- Clean and prepare the crabs by removing the top shell and cutting them into quarters.
- Heat the vegetable oil in a large wok over medium heat. Add the onion, garlic, and red chilies, and stir-fry until fragrant.
- Stir in the tomato ketchup, chili sauce, soy sauce, water, and sugar. Bring to a simmer.
- Add the crab pieces to the wok and stir to coat them with the sauce. Cover and cook for 8-10 minutes, or until the crab is cooked through.
- Slowly pour in the beaten egg while stirring the crab mixture gently to create a silky texture.
- Garnish with chopped green onions before serving.
