Hainan Curry Laksa

Ingredients

  • 400g rice noodles

  • 4 cups chicken broth
  • 3 tbsp curry powder
  • 2 tbsp vegetable oil
  • 1 onion, finely chopped

  • 1 tbsp ginger, grated
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • Salt to taste
  • Fresh cilantro, bean sprouts, and lime wedges for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until fragrant.
