Ingredients
- 400g rice noodles
- 500g chicken thighs, sliced

- 4 cups chicken broth

- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp fish sauce
- 1 tbsp sugar
- Salt to taste
- Fresh cilantro, bean sprouts, and lime wedges for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until fragrant.
- Add the curry powder and continue to cook for 1-2 minutes, stirring constantly.
