Hainanese Black Bean Chicken Stir-fry

Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 2 tablespoons fermented black beans
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sugar
  • 1/2 teaspoon cornstarch
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 2 green onions, chopped
  • 2 tablespoons vegetable oil
  • Steamed rice, for serving

Instructions

  1. In a small bowl, mix the fermented black beans, soy sauce, oyster sauce, Shaoxing wine, sugar, and cornstarch. Set aside.
  2. Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic and stir-fry for 30 seconds.
  3. Add the chicken and stir-fry until it is no longer pink. Add the onion, bell pepper, and black bean sauce mixture. Stir-fry for another 2-3 minutes until the vegetables are tender and the chicken is cooked through.
