Hainanese Black Pepper Beef Noodles

Ingredients

  • 400g beef sirloin, thinly sliced
  • 300g fresh noodles
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 2 tablespoons black peppercorns, crushed
  • 3 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon sugar
  • 1 cup beef broth
  • Salt to taste

Instructions

  1. Heat vegetable oil in a wok or large skillet over medium-high heat.
  2. Add the beef slices and stir-fry until browned. Remove the beef from the wok and set aside.
  3. In the same wok, add more oil if needed and sauté the onion, garlic, and red bell pepper until fragrant.
  4. Add the crushed black peppercorns and stir-fry for another minute.
  5. Return the beef to the wok and add oyster sauce, soy sauce, dark soy sauce, and sugar. Stir well to combine.
  6. Pour in the beef broth and bring the mixture to a simmer. Cook for a few minutes until the sauce thickens.
  7. Cook the fresh noodles according to the package instructions and divide them into serving bowls.
  8. Ladle the black pepper beef over the noodles and serve hot.
