Hainanese Braised Pork Belly

Ingredients

  • 1.5 lbs (700g) pork belly, cut into thick slices
  • 4 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1 thumb-sized ginger, sliced
  • 2 star anise
  • 3 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sugar
  • 1 tsp five-spice powder
  • 2 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, blanch the pork belly slices in boiling water for 5 minutes. Drain and set aside.
  2. Heat some oil in the pot and sauté the garlic, shallots, and ginger until fragrant.
  3. Add the blanched pork belly, star anise, soy sauce, dark soy sauce, oyster sauce, sugar, five-spice powder, and water to the pot. Bring to a boil.
  4. Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours until the pork belly is tender and the sauce has thickened.
  5. Season with salt and pepper to taste.
  6. Serve the Hainanese Braised Pork Belly hot with steamed rice.
