Hainanese Caramelized Soy Sauce Ribs

Ingredients

  • 1.5 kg pork ribs
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 cups water
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the minced garlic and sliced ginger, and sauté until fragrant.
  3. Add the pork ribs to the pot and brown them on all sides.
  4. Pour in the soy sauce, brown sugar, and water. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour, or until the ribs are tender and the sauce has thickened.
  6. Once the ribs are cooked, remove them from the pot and set aside.
  7. Turn the heat to medium-high and continue to cook the sauce until it thickens and caramelizes.
  8. Return the ribs to the pot and coat them with the caramelized sauce.
