Hainanese Chicken Mushroom Claypot Rice

Ingredients

  • 2 cups jasmine rice
  • 4 chicken thighs, bone-in and skin-on
  • 1 cup shiitake mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 inches ginger, sliced
  • 4 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 green onions, chopped

Instructions

  1. Rinse the jasmine rice and drain well. Place it in the claypot.
  2. Arrange the chicken thighs on top of the rice in the claypot.
  3. Scatter the sliced shiitake mushrooms, minced garlic, and ginger over the chicken and rice.
  4. In a separate bowl, mix the chicken broth, soy sauce, oyster sauce, sesame oil, sugar, salt, and white pepper. Pour this mixture over the chicken and rice in the claypot.
  5. Cover the claypot and cook over medium heat for 30-35 minutes, or until the rice is cooked and the chicken is tender.
  6. Uncover the claypot and let it cook for an additional 5-10 minutes to allow the bottom layer of rice to become crispy.
  7. Garnish with chopped green onions before serving.
