Ingredients
- 2 cups jasmine rice
- 4 chicken thighs, bone-in and skin-on
- 1 cup shiitake mushrooms, sliced
- 4 cloves garlic, minced
- 2 inches ginger, sliced
- 4 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 green onions, chopped
Instructions
- Rinse the jasmine rice and drain well. Place it in the claypot.
- Arrange the chicken thighs on top of the rice in the claypot.
- Scatter the sliced shiitake mushrooms, minced garlic, and ginger over the chicken and rice.
- In a separate bowl, mix the chicken broth, soy sauce, oyster sauce, sesame oil, sugar, salt, and white pepper. Pour this mixture over the chicken and rice in the claypot.
- Cover the claypot and cook over medium heat for 30-35 minutes, or until the rice is cooked and the chicken is tender.
- Uncover the claypot and let it cook for an additional 5-10 minutes to allow the bottom layer of rice to become crispy.
- Garnish with chopped green onions before serving.
