Hainanese Chicken Rice (海南鸡饭)

Ingredients

  • 1 whole chicken, about 3-4 lbs
  • 2 cups jasmine rice
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 stalks scallions, chopped
  • 1 cucumber, sliced
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon vegetable oil
  • Salt to taste

Instructions

  1. Wash the chicken and pat dry. Rub the chicken with salt, inside and out.
  2. In a large pot, bring water to a boil. Add the ginger and scallions. Place the whole chicken into the pot, breast side down. Lower the heat to a simmer and poach the chicken for about 30-40 minutes, or until cooked through.
  3. Remove the chicken from the pot and place it in a bowl of ice water to cool. Save the poaching liquid to cook the rice.
  4. Rinse the jasmine rice under cold water until the water runs clear. In a pot, heat vegetable oil and sauté garlic until fragrant. Add the rice and stir to coat with the oil and garlic.
  5. Measure the poaching liquid and add enough water to make 4 cups of liquid. Pour the liquid into the pot with the rice. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked.
  6. While the rice is cooking, chop the chicken into serving pieces. Mix the sesame oil, soy sauce, and oyster sauce in a small bowl for dipping sauce.
  7. Serve the Hainanese Chicken Rice with cucumber slices, dipping sauce, and hot broth on the side.
