Hainanese Chicken Rice, also known as Nasi Ayam Hainan, is a popular dish in Malay cuisine. It consists of poached chicken and seasoned rice, served with a flavorful dipping sauce and a clear soup.

Hainanese Chicken Rice (nasi Ayam Hainan)

Ingredients

  • 1 whole chicken (about 3-4 lbs)
  • 2 cups jasmine rice
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 stalks spring onions, chopped
  • 1 cucumber, sliced
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Wash the chicken and pat dry. Rub the chicken with salt and let it sit for 10 minutes.
  2. In a large pot, bring water to a boil. Add the chicken and cook for 30-40 minutes until fully cooked. Remove the chicken and let it cool before chopping into pieces.
  3. Rinse the rice and drain. In a pot, heat vegetable oil and sauté garlic and ginger until fragrant. Add the rice and stir to coat with the oil. Transfer the rice to a rice cooker and add the appropriate amount of water to cook the rice.
  4. In a small bowl, mix sesame oil, soy sauce, and oyster sauce. Serve as a dipping sauce for the chicken.
