Hainanese Chicken Rice (oyster Sauce Chicken Surprise)

Ingredients

  • 1 whole chicken, about 3 lbs
  • 1 cup jasmine rice
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 4 cups chicken broth
  • 2 stalks green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Wash the chicken and pat dry. Rub the chicken with salt and let it sit for 10 minutes.
  2. In a large pot, bring the chicken broth to a boil. Add the chicken, ginger, and half of the green onions. Simmer for 30-40 minutes until the chicken is cooked through. Remove the chicken and let it rest before chopping into serving pieces.
  3. Rinse the jasmine rice until the water runs clear. In a pot, heat sesame oil and sauté garlic until fragrant. Add the rice and stir to coat with the oil. Transfer the rice to a rice cooker and add the chicken broth from poaching the chicken. Cook the rice according to the rice cooker instructions.
  4. In a separate pan, heat oyster sauce and soy sauce. Add the chopped chicken pieces and toss to coat with the sauce. Cook for a few minutes until the sauce thickens.
  5. Serve the oyster sauce chicken with the fragrant jasmine rice. Garnish with the remaining green onions.
