Hainanese Chicken Rice Surprise
Hainanese Chicken Rice Surprise is a classic Singaporean dish that features succulent poached chicken served with fragrant rice, accompanied by flavorful sauces and a surprise side dish.
Ingredients
- 1 whole chicken, about 3 lbs
- 2 cups jasmine rice
- 4 cloves garlic, minced
- 1 thumb-sized ginger, sliced
- 2 tablespoons vegetable oil
- 1 cucumber, sliced
- 1 bunch cilantro, chopped
- 4 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon oyster sauce
- 1 tablespoon chili sauce
Instructions
- Wash the chicken and pat dry. Rub the skin with salt and set aside.
- Rinse the jasmine rice until the water runs clear. Drain well.
- In a pot, heat the vegetable oil over medium heat. Add the minced garlic and ginger slices, and sauté until fragrant.
- Add the drained rice to the pot and stir to coat with the aromatics. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes.
- While the rice is cooking, prepare the chicken. In a large pot, bring water to a boil. Submerge the whole chicken, breast side down, and simmer for 30 minutes. Remove the chicken and plunge it into an ice bath to stop the cooking process. Once cooled, chop the chicken into serving pieces.
- Combine the soy sauce, sesame oil, oyster sauce, and chili sauce to make the dipping sauce.
- Fluff the cooked rice and transfer it to a serving platter. Arrange the sliced cucumber and chopped cilantro around the rice. Place the chopped chicken on top of the rice.
