Ingredients

  • 2 stalks lemongrass, smashed

  • 1 cup sliced mushrooms
  • 1 block firm tofu, cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice

Instructions

  1. In a large pot, combine the vegetable broth, coconut milk, lemongrass, onion, garlic, and ginger. Bring to a simmer over medium heat.
