Hainanese Five-spice Duck

Ingredients

  • 1 whole duck, about 4 lbs
  • 2 tablespoons five-spice powder
  • 1 tablespoon salt
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 4 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon cooking oil
  • 4 cups water

Instructions

  1. Rinse the duck and pat dry. Rub the duck inside and out with a mixture of five-spice powder and salt.
  2. Heat the cooking oil in a large pot over medium heat. Add the minced garlic, ginger, and green onions. Sauté until fragrant.
  3. Add the duck to the pot and brown on all sides.
  4. Pour in the soy sauce and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 2 hours, or until the duck is tender.
  5. Remove the duck from the pot and let it rest for 10 minutes before carving.
  6. Strain the cooking liquid and serve as a sauce for the duck.
