Hainanese Lemongrass Coconut Curry Tofu

Ingredients

  • 1 block of firm tofu, cubed
  • 2 stalks of lemongrass, smashed and chopped
  • 1 can of coconut milk
  • 2 tablespoons of red curry paste
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 tablespoon of soy sauce
  • 1 tablespoon of brown sugar
  • 1 tablespoon of vegetable oil
  • Salt to taste

Instructions
