Hainanese Pineapple Cashew Fried Rice

Ingredients

  • 3 cups cooked jasmine rice
  • 1 cup fresh pineapple chunks
  • 1/2 cup cashews
  • 2 eggs, beaten
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium heat.
  2. Add beaten eggs and scramble until cooked. Remove from the wok and set aside.
  3. Heat the remaining 1 tablespoon of vegetable oil in the same wok.
  4. Sauté garlic and onion until fragrant.
  5. Add cooked rice, soy sauce, oyster sauce, sugar, and white pepper. Stir-fry for 3-4 minutes.
  6. Add pineapple chunks, cashews, and scrambled eggs. Stir-fry for another 2-3 minutes.
  7. Adjust seasoning to taste, if needed.
  8. Transfer the fried rice to a serving dish and serve hot.
