Ingredients
- 3 cups cooked jasmine rice
- 1 cup fresh pineapple chunks
- 1/2 cup cashews
- 2 eggs, beaten
- 3 cloves garlic, minced
- 1 small onion, diced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon sugar
- 1/4 teaspoon white pepper
- 2 tablespoons vegetable oil
Instructions
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium heat.
- Add beaten eggs and scramble until cooked. Remove from the wok and set aside.
- Heat the remaining 1 tablespoon of vegetable oil in the same wok.
- Sauté garlic and onion until fragrant.
- Add cooked rice, soy sauce, oyster sauce, sugar, and white pepper. Stir-fry for 3-4 minutes.
- Add pineapple chunks, cashews, and scrambled eggs. Stir-fry for another 2-3 minutes.
- Adjust seasoning to taste, if needed.
- Transfer the fried rice to a serving dish and serve hot.
