Ingredients
- 3 cups cooked jasmine rice
- 1 cup diced pineapple
- 1/2 cup diced carrots
- 1/2 cup diced bell peppers
- 1/2 cup green peas
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pan or wok over medium heat.
- Add garlic and onion, and sauté until fragrant.
- Push the garlic and onion to one side of the pan, and pour the beaten eggs onto the other side. Scramble the eggs until cooked, then mix with the garlic and onion.
- Add carrots, bell peppers, and green peas. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
- Add cooked rice and diced pineapple to the pan. Stir well to combine all the ingredients.
- Pour soy sauce over the rice and mix until evenly coated. Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes, stirring constantly, until the rice is heated through.
- Remove from heat and serve hot.
