Hainanese Pineapple Shrimp Fried Rice

Ingredients

  • 2 cups cooked rice
  • 1 cup diced pineapple
  • 1/2 lb shrimp, peeled and deveined
  • 2 eggs, beaten
  • 3 cloves garlic, minced
  • 1/2 cup diced onion
  • 1/4 cup diced red bell pepper
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1/2 tsp sugar
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Heat a large wok or skillet over medium-high heat. Add a tablespoon of oil and sauté the shrimp until pink and cooked through. Remove from the wok and set aside.
  2. In the same wok, add a bit more oil if needed and scramble the beaten eggs. Once cooked, remove from the wok and set aside.
  3. Add a bit more oil to the wok if needed, then sauté the garlic and onions until fragrant.
  4. Add the diced pineapple and red bell pepper to the wok and stir-fry for a few minutes.
  5. Stir in the cooked rice, soy sauce, fish sauce, and sugar. Cook, stirring constantly, until the rice is heated through and well combined with the other ingredients.
  6. Return the cooked shrimp and scrambled eggs to the wok and toss to mix everything together.
  7. Season with salt and pepper to taste, then stir in the chopped green onions and cilantro.
