Hainanese Pork Belly Adobo

Ingredients

  • 1.5 lbs pork belly, cut into cubes
  • 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup water
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 3 bay leaves
  • 1 teaspoon whole peppercorns
  • 2 tablespoons brown sugar

Instructions

  1. In a bowl, combine the pork belly, soy sauce, vinegar, water, garlic, onion, bay leaves, and peppercorns. Marinate for at least 30 minutes.
  2. Heat a large pot over medium heat. Add the marinated pork belly and marinade mixture. Bring to a boil, then reduce heat to low and simmer for 45 minutes, stirring occasionally.
  3. Add brown sugar and continue to simmer for another 15 minutes, or until the pork belly is tender and the sauce has thickened.
