Ingredients
- 500g large prawns, peeled and deveined
- 2 salted duck eggs
- 1/2 cup cornstarch
- 1/4 cup butter
- 5 cloves garlic, minced
- 2 red chili peppers, sliced
- 1 sprig curry leaves
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
Instructions
- In a bowl, mash the salted duck eggs into a fine paste.
- Coat the prawns in cornstarch and deep-fry until golden brown. Set aside.
- In a pan, melt the butter and sauté the garlic until fragrant.
- Add the chili peppers and curry leaves, and stir-fry for 1 minute.
- Add the salted egg yolk paste, sugar, salt, and white pepper. Cook until the sauce thickens.
- Toss the fried prawns in the salted egg yolk sauce until well coated.
- Transfer to a serving plate and garnish with additional curry leaves and chili peppers if desired.
