Hainanese Salted Egg Prawns

Ingredients

  • 500g large prawns, peeled and deveined
  • 2 salted duck eggs
  • 1/2 cup cornstarch
  • 1/4 cup butter
  • 5 cloves garlic, minced
  • 2 red chili peppers, sliced
  • 1 sprig curry leaves
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper

Instructions

  1. In a bowl, mash the salted duck eggs into a fine paste.
  2. Coat the prawns in cornstarch and deep-fry until golden brown. Set aside.
  3. In a pan, melt the butter and sauté the garlic until fragrant.
  4. Add the chili peppers and curry leaves, and stir-fry for 1 minute.
  5. Add the salted egg yolk paste, sugar, salt, and white pepper. Cook until the sauce thickens.
  6. Toss the fried prawns in the salted egg yolk sauce until well coated.
  7. Transfer to a serving plate and garnish with additional curry leaves and chili peppers if desired.
