Hainanese Sesame Chicken Salad

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 teaspoon grated ginger
  • 1 garlic clove, minced
  • 4 cups mixed salad greens
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, thinly sliced
  • 2 tablespoons toasted sesame seeds

Instructions

  1. In a pot, bring water to a boil. Add the chicken breasts and simmer for 10-12 minutes until cooked through. Remove from the water and let cool. Shred the chicken into bite-sized pieces.
