Hainanese Sweet And Sour Tofu

Ingredients

  • 1 block of firm tofu, cubed
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1/4 cup tomato ketchup
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. Heat vegetable oil in a pan over medium heat, then add the tofu cubes and cook until golden brown. Remove from the pan and set aside.
  3. In the same pan, sauté the garlic, onion, and bell peppers until they are tender-crisp.
  4. In a small bowl, mix together the tomato ketchup, rice vinegar, soy sauce, brown sugar, cornstarch, and water to create the sweet and sour sauce.
  5. Pour the sauce into the pan with the vegetables and bring to a simmer until the sauce thickens.
  6. Add the cooked tofu back into the pan and toss to coat with the sweet and sour sauce.
  7. Season with salt and pepper to taste.
