Ingredients
- 1 block of firm tofu, cubed
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 3 cloves of garlic, minced
- 1/4 cup tomato ketchup
- 2 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1/4 cup water
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Press the tofu to remove excess water, then cut it into cubes.
- Heat vegetable oil in a pan over medium heat, then add the tofu cubes and cook until golden brown. Remove from the pan and set aside.
- In the same pan, sauté the garlic, onion, and bell peppers until they are tender-crisp.
- In a small bowl, mix together the tomato ketchup, rice vinegar, soy sauce, brown sugar, cornstarch, and water to create the sweet and sour sauce.
- Pour the sauce into the pan with the vegetables and bring to a simmer until the sauce thickens.
- Add the cooked tofu back into the pan and toss to coat with the sweet and sour sauce.
- Season with salt and pepper to taste.
