海派红烧牛肉面 (Haipai Braised Beef Noodles) is a classic dish in Haipai Cuisine, known for its rich and savory flavors. This recipe combines tender braised beef with chewy noodles in a fragrant and hearty broth, making it a comforting and satisfying meal.
Ingredients
- 500g beef brisket, cut into chunks
- 300g fresh noodles
- 3 slices ginger
- 2 scallions, cut into 2-inch pieces
- 2 star anise
- 1 cinnamon stick
- 3 cloves
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp Shaoxing wine
- 1 tbsp sugar
- 1 tsp salt
- 1.5L water
Instructions
- In a large pot, blanch the beef brisket in boiling water for 5 minutes. Remove and rinse under cold water.
- Heat some oil in the pot and sauté the ginger, scallions, star anise, cinnamon stick, and cloves until fragrant.
- Add the beef brisket back into the pot, then pour in the soy sauce, dark soy sauce, Shaoxing wine, sugar, and salt. Stir well.
- Pour in the water and bring to a boil. Reduce heat to low, cover, and simmer for 1.5 hours until the beef is tender.
- Cook the fresh noodles according to package instructions, then divide into serving bowls.
- Ladle the braised beef and broth over the noodles. Serve hot and enjoy!
