Haipai Braised Beef Noodles (海派红烧牛肉面)

Ingredients

  • 500g beef brisket, cut into chunks
  • 300g fresh noodles
  • 3 slices ginger
  • 2 scallions, cut into 2-inch pieces
  • 2 star anise
  • 1 cinnamon stick
  • 3 cloves
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 1 tsp salt
  • 1.5L water

Instructions

  1. In a large pot, blanch the beef brisket in boiling water for 5 minutes. Remove and rinse under cold water.
  2. Heat some oil in the pot and sauté the ginger, scallions, star anise, cinnamon stick, and cloves until fragrant.
  3. Add the beef brisket back into the pot, then pour in the soy sauce, dark soy sauce, Shaoxing wine, sugar, and salt. Stir well.
  4. Pour in the water and bring to a boil. Reduce heat to low, cover, and simmer for 1.5 hours until the beef is tender.
  5. Cook the fresh noodles according to package instructions, then divide into serving bowls.
  6. Ladle the braised beef and broth over the noodles. Serve hot and enjoy!
