Haipai Braised Duck (海派卤鸭)

Ingredients

  • 1 whole duck, about 4 lbs
  • 1 cup soy sauce
  • 1/2 cup Shaoxing wine
  • 1/4 cup rock sugar
  • 4 slices ginger
  • 3 scallions, cut into 2-inch pieces
  • 2 star anise
  • 1 cinnamon stick
  • 1 tsp Sichuan peppercorns
  • 4 cups water

Instructions

  1. Rinse the duck and pat dry. Cut into pieces.
  2. In a large pot, combine soy sauce, Shaoxing wine, rock sugar, ginger, scallions, star anise, cinnamon stick, Sichuan peppercorns, and water. Bring to a boil.
  3. Add the duck pieces to the pot and bring to a simmer. Cover and cook for 1.5 hours, stirring occasionally.
  4. Uncover the pot and continue to simmer for another 30 minutes, or until the duck is tender and the sauce is reduced.
  5. Transfer the braised duck to a serving dish and pour the sauce over the top. Serve hot with steamed rice.
