海派卤鸭 (Haipai Braised Duck) is a classic dish in Haipai Cuisine, known for its rich flavors and tender meat. This recipe combines traditional Chinese braising techniques with local Shanghai ingredients to create a savory and aromatic dish.
Ingredients
- 1 whole duck, about 4 lbs
- 1 cup soy sauce
- 1/2 cup Shaoxing wine
- 1/4 cup rock sugar
- 4 slices ginger
- 3 scallions, cut into 2-inch pieces
- 2 star anise
- 1 cinnamon stick
- 1 tsp Sichuan peppercorns
- 4 cups water
Instructions
- Rinse the duck and pat dry. Cut into pieces.
- In a large pot, combine soy sauce, Shaoxing wine, rock sugar, ginger, scallions, star anise, cinnamon stick, Sichuan peppercorns, and water. Bring to a boil.
- Add the duck pieces to the pot and bring to a simmer. Cover and cook for 1.5 hours, stirring occasionally.
- Uncover the pot and continue to simmer for another 30 minutes, or until the duck is tender and the sauce is reduced.
- Transfer the braised duck to a serving dish and pour the sauce over the top. Serve hot with steamed rice.
